At first, we thought that we were selling our champagnes from Soulieres. Then we understood, that champagne no matter how good, is a means to something even more important.
When you drink or eat something special in good company, you add more quality to the moment. Afterwards you will look back differently and share the memory of it forever. We’d like to share with you a few of our own suggestions in a new inspirational theme.
Maybe you agree with us that the ways we grow the grapes make a difference? This year we landed our first yields after three years of conversion. We look so much forward to share our future organic champagnes with you in some years.

Spring has arrived big time. Little flowers, then tulips and daffodils, flowering bushes. Only then will the trees of the forest try on their new bright dresses in the best of springtime greens. First the smaller trees, then the tall ones. That’s when the in the vineyards, the Chardonnays first then the Pinots finally let go of their swelling pink cones, and we rejoice when we observe the early leaves of the year. So appetizing we could almost eat them. Once again the development of the buds happened in early April. More than one sped up to finish attaching the older branches to the wires.
Light green leaves is not alone in appearing in spring. Garden tables and chairs, and with the sun as a faithful partner for the last many weeks, we have even gotten through the first garden parties. Dinner inside though, as the evenings are still cold.
We serve our latest bottle happily: Sollissandre Blancs. It fits a lot: black olives, small pieces of cheese, smoked ham, radish with pesto made of leaves from the garden or something else. 100% Chardonnay, part of it raised in oak barrels, which adds quite a bit of power to this champagne, and certainly more than we are used to when we use Chardonnay only. the bottle is wonderful at your table as well, should anything be left.
